Apple Cake with Caramel Sauce

Ingredients

  • 1 1/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/2 cup vegetable oil
  • 1 cup brown sugar
  • 2 eggs
  • 1 teaspoon pure vanilla extract
  • 1/2 cup buttermilk
  • 1 1/2 cup peeled and shredded apple

For the caramel sauce

  • 1 cup brown sugar
  • 1/2 cup evaporated milk
  • 1/4 cup unsalted butter
  • 1/8 teaspoon salt
  • 2 teaspoons pure vanilla extract

Instructions

  1. Set oven to 350 degrees F. Spray an 8×8 inch baking pan with non-stick spray and set aside.
  2. In a medium bowl, combine flour, baking powder, baking soda and salt. Whisk well to combine. In the bowl of a mixer fitted with the paddle attachment, add vegetable oil, brown sugar, eggs and vanilla. Mix on medium speed until well combined. Add flour mixture and buttermilk. Mix until well combined. Stir in shredded apple with a rubber spatula.
  3. Pour batter into the prepared baking dish. Bake for 40-45 minutes, or until an inserted toothpick comes out clean.
  4. While cake cool, prepare caramel sauce. In a medium saucepan over medium heat, combine brown sugar, evaporated milk, butter and salt. Bring to a simmer and cook until butter is melted and brown sugar is dissolved. Simmer for an additional 2 minutes. Remove from heat and add vanilla. Cool slightly and use immediately.
