Molasses Cookies


Description

Pumpkin spice has had too much time in the spotlight. Move over pumpkin cookies, it's time for molasses cookies to shine.


Ingredients

  • 3⅓ cups all-purpose flour
  • 3 teaspoons ground ginger
  • 1½ teaspoons baking soda
  • 1 teaspoon ground cinnamon
  • ¾ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup unsalted butter
  • ¼ cup vegetable shortening
  • 1½ cups granulated sugar
  • 2 eggs
  • ⅓ cup molasses
  • 1 tablespoon orange zest
  • turbinado sugar, for rolling

Instructions

  1. Set oven to 350 degrees F. In a medium bowl, combine flour, ginger, baking soda, cinnamon, cloves, nutmeg and salt. Whisk together well and set aside.
  2. In the bowl of a mixer fitted with the paddle attachment, add butter and shortening and mix until smooth. Add sugar and mix on medium speed for 3 minutes, until light and fluffy. Add eggs, molasses and orange zest. Mix well, being sure to scrape the side of the bowl with a rubber spatula. Add flour mixture and mix on medium speed.
  3. Add a cup or so of turbinado sugar into a shallow bowl. Portion the cookie dough into 2 inch balls and roll in turbinado sugar. Set on a baking sheet, spacing them about 2 inches apart. Bake for 10-12 minutes, or until the edges are lightly browned. Transfer to a cooling rack and repeat with the remaining dough.
